Q. Where can I find information about the growth rate of the retail baking industry in the U.S.?
We have a database called Statista. You can find it here: http://library.uhd.edu/business under the "Company and Industry Resourses" tab. Go into Statista and search: Bakeries. You will find a lot of information under the search results.
It is not as clear about looking at retail bakeries specifically. The government does a very specific economic census every 5 years, but the most recent information is from 2017. You can find it here: https://www.census.gov/topics/business-economy.html Look for "Baked goods stores". There’s also this: http://www.census.gov/retail/. But it does not give that specific a breakdown. Bakeries fall under the government NAICS code of 445291, but only very broad industries (grocery stores, for example) are covered.
