I would suggest that you contact Vice President for Advancement and External Relations, and/or Director of the Office of Sponsored Programs, to see if there is already something prepared to use for this purpose, since the University has made previous applications to the Houston Endowment.
If this doesn't work for you, you could also probably come up with a list of events from the UHD Magazine. The Magazine archive is on the University Relations website at https://www.uhd.edu/administration/university-relations/Pages/magazine-archive.aspx.
