Q. Where can I find information about the growth rate of the retail baking industry in the U.S.?
We have a great industry database called First Research — it’s by Dun & Bradstreet. It will give you a lot of growth information about bakeries. You can find it here: http://library.uhd.edu/business under the "Company and Industry Resourses" tab. Go into First Research and look for the category “Food and Agriculture.” Bakeries are listed under that heading. You may be interested in a lot of information under there.
It is not as clear about looking at retail bakeries specifically. The government does a very specific economic census every 5 years, but the most recent information is from 2012. You can find it here: http://www.census.gov/econ/isp/index.php Look for "Baked goods stores". There’s also this: http://www.census.gov/retail/. But it does not give that specific a breakdown. Bakeries fall under the government NAICS code of 445291, but only very broad industries (grocery stores, for example) are covered.
