You can use the library-subscribed resources listed here under “Industry”: http://library.uhd.edu/content.php?pid=94969&sid=2822628. I recommend FirstResearch, D&B Key Business Ratios, and eStatement Studies. All of these allow you to look up a line of business, like restaurants, and get business ratios for that industry you can use as benchmarks. When you access these resources from off-campus, it will ask you to login through student e-services.

If you don’t mind paying for something, you may want to join the National Restaurant Association. That seems to be a major association for the restaurant industry, and they have publications, etc. that may help you.
